Columbia Researchers Find Biological Explanation for Wheat Sensitivity

NEW YORK, NY (July 26, 2016)—A new study may explain why people who do not have celiac disease or wheat allergy nevertheless experience a variety of gastrointestinal and extra-intestinal symptoms after ingesting wheat and related cereals. The findings suggest that these individuals have a weakened intestinal barrier, which leads to a body-wide inflammatory immune response.

Findings from the study, which was led by researchers from Columbia University Medical Center (CUMC), were reported in the journal Gut.

“Our study shows that the symptoms reported by individuals with this condition are not imagined, as some people have suggested,” said study co-author Peter H. Green, MD, the Phyllis and Ivan Seidenberg Professor of Medicine at CUMC and director of the Celiac Disease Center. “It demonstrates that there is a biological basis for these symptoms in a significant number of these patients.”

Is it safe to drink gluten-removed beers?

Most “gluten-removed” beers are made using gluten containing ingredients like… barley.  During fermentation an enzyme is used that breaks down gluten.  The real issue is whether or not the things that are left (peptides) cause a negative reaction in those who (like me) have Celiac Disease.  Personally… I would love to see some of the bigger breweries that produce these beers, like Omission, band together to commission additional scientific research in this area, including a double blind study on the actual effects of drinking gluten removed beers on those suffer from Celiac Disease.

Smart Flour Foods Frozen Gluten Free Pizza and Crusts!

I really struggled to find a good gluten free frozen pizza.  The biggest problem that I had was the use of a lot of rice flour in the crust.  Most of them were just too dense and didn’t really remind me of a real pizza crust.

After actually liking Mellow Mushroom’s GF Pizza (and liking the way they handle it) See: Dear Mellow Mushroom… Thank You I noticed that they used Smart Flour Foods Crusts.  I looked to see if Smart Flour sold mixes and didn’t find any.  I did however notice that they sell frozen pizzas and frozen pizza crusts.

One of the reasons that I like Smart Flours crust is that it doesn’t have the consistency of most GF pizza crusts I’ve tried that are usually rice based.  Smart Flours crust ingredients include…

Smart Flour (Tapioca Flour, Sorghum Flour, Teff Flour, Amaranth Flour), Potato Starch, Modified Tapioca Starch, Sorghum Flour, Water, Olive Oil, Sugar, Agave, Flax Seed, Yeast, Salt, Xanthan Gum, Baking Powder (Sodium Acid Pyrophosphate, Sodium Bicarbonate, Cornstarch, Monocalcium Phosphate), Guar Gum, Baking Soda, Canola Oil.

Current variations available include – uncured pepperoni, cheese, margherita, chicken sausage, Tuscan inspired two meat and Italian sausage.  Those are available in two sizes both regular and family size.

I had a hard time actually tracking these down in my area, although I was finally able to lay my hands on some (with a little bit of a drive).  I’m happy to say that Smart Flour Foods makes a delicious frozen pizza.

To put that to the test, I performed a GlutenTox test. GlutenTox allows you to choose between 5 and 20 PPM.  I performed this test at the 20 PPM (parts per million) sensitivity level.

The test stick has two lines, the one on the left is the blue control line and should always become visible.  There is another possible line just to the right of that, that one is red.  That becomes visible if gluten is detected at the selected concentration.  As you can see in this photo only the control line is visible.  According to this result the sample I tested has a lower than 20 PPM gluten content.

Each GlutenTox test comes with single use pipettes, extract solution, dilution solution, sample scoop and a test stick.  The testing process is relatively simple and the instructions are clearly written.  This test gives you some flexibility as you have the choice between testing at 20 PPM (parts per million) or 5 PPM.  Under 20 PPM allows manufacturers to label certain foods as gluten free.
